Mechanical Soft Diet
Foods puréed to have a smoother consistency than regular foods. They require very little or no chewing at all to swallow.
Soft Food:

Moist, tender meat or poultry that is ground, shredded, finely chopped or blended with vegetables or potatoes, using a food processor.

Preparing a Mechanical Soft Diet
Meatloaf Recipe for Mechanical Soft Diet
TOTAL TIME REQUIRED: 1 hour and 10 minutes
Servings: 8
Ingredients:
1 1/2 pounds ground beef
2 eggs
1/2 cup each: onion and green bell pepper, finely chopped or pureed
3/4 cup milk
1 cup dried bread crumbs
1/8 teaspoon each salt, pepper, and garlic powder
2 tablespoons each: sugar and molasses
2 tablespoons yellow mustard
1/3 cup ketchup
Instructions:
Preheat oven to 350 degrees.
In a large mixing bowl, combine the beef, egg, onion, milk and bread crumbs. Season with salt, pepper, and garlic powder. Spoon mixture into a greased 5x9 inch loaf pan, or form into a loaf and place in a lightly greased baking dish.
In a separate small bowl, combine the sugar, molasses, mustard and ketchup. Mix well and pour over the meatloaf.
Bake at 350 degrees for 1 hour.
